Ingredients
- 300g (1 pack) BE yellow curry sauce
- 400g Fusilli pasta (or penne)
- 350g Mushrooms (seasonal mix) (sliced)
- 2 cloves Garlic (minced)
- 40g Butter
- 1/2 cup Water from pasta
- 100g gratted Cheese (comte/emmenthal)
- 1/2 handful of Spring onions or chives
- Black Pepper to taste
Cooking Steps
Preparation:
1. Cook the pasta (al dente) in salted water according to package instructions. Drain and set aside.
2. While pasta is cooking, heat a large pan with butter and add the mixed mushrooms to brown without stiring for a few minutes.
3. Add in the pan the minced garlic and continue to saute the mushrooms a few minutes until golden.
4. Stir in the BE yellow curry sauce with 1/2 cup of the cooking water of the pasta and let it simmer for a few minutes.
5. Add the 1/2 of the grated cheese to the sauce and let it melt
6. Add the pasta to the pan and stir for a couple of minutes until everything in warm and combined.
7. Serve garnished with grated cheese, freshly cracked black pepper and the spring onions
Chef S Tip
Feel free to add in some more green vegetables like asparagus or fresh spinach in this dish to make it healthier. You can also toss some proteins on top, like grilled chicken, to get a perfectly balanced dish. Bon appetit !
