Ingredients

- 1 Tom Yam noodle cooking set that contains :
– 100g Rice noodles
-95gTom Yam Soup Mix
-5g roasted chili paste
- 400 ml Water
- 2 leaves Kaffir lime leaves (optional)
- 2 slices Galangal (optional)
- 200g Prawns (deshelled,headless)
- 50g Mushrooms (quartered)
- 1 Lime ( in wedges)
- 1 handful of coriander leaves (optional)

Cooking Steps

Preparation :

1. Blanch the rice noodles in boiling water for 2 minutes. Drain the noodles and set aside in 2 serving bowls.

2. In a saucepan, boil 400ml of water and add the Tom Yam soup mix (and some optional herbs if you have: 2 kaffir limes leaves and 2 slices of galangal).

3. When boiling again, add the prawns and mushrooms until cooked through (also great with other proteins of your choice).

4. Ladle the broth with prawns and mushrooms on top of each bowl of noodles.

5. Garnish with the roasted chili paste and a sprinkle of coriander leaves (optional). Season to taste with a squeeze of lime or lemon juice.

Chef S Tip

This broth is packed with flavors and will take you to Thailand as is. But do not underestimate the toppings for soups : they elevate the dish to another level and make it even more yummy to the eyes… so worth the little extra effort !
