Ingredients
Chicken thigh 300g.
BE Yellow curry paste 70g.
ligh soya sauce 1 Tbsp.
Sugar 1 1/2 Tbs.
Coconut milk 165ml.
VG oil 1 Tbsp.
Salt 1/4 Tbs.
Pepper 1/4 Tbs.
Garlic 2 cloves.
Coriander root 2 stems
Cucumber salad
Cucumber 1 pce.
Dill 2-3 stems
Coriander 2 stems
Vinegar 3 Tbsp.
Salt 2 Tbsp.
Sugar 1/4 Tsp.
Cooking Steps
Preparation :
1. In a mortar or a blender, grind the garlic, coriander roots, black peppercorns and yellow curry paste until they turn into a rough paste.
2. In a bowl: Mix the paste and seasonings together. Add the chicken thighs and vegetable oil.
3. Let the chicken marinate the chicken in this mixture for 30 min at least.
4. In a separate mixing bowl, stir in the vinegar, salt and sugar until all dissolve.
5. Add the sliced cucumber to this dressing and set aside.
6. Grill the chicken for about 5 min.
7. Slice the grilled chicken strips. Place on top of the cucumber salad and garnish with fresh herbs.

Sprinkle with fresh dill and coriander.
