Crispy Fish and Green Mango Thai Salad

Ingredients

White Fish fillet (firm flesh) 140g.
Pepper 1 Tsp.
Salt 1 Tsp.
Wheat flour 1/2 cup
BE Som Tam Dressing 6 Tbsp.
Green Mango 1 pcs.
Shallots 6 heads.
Coriander leaves 3 stems.
cashew nuts 1 Tbsp.
Dried shrimps 1/4 Tbsp.
Garlic 2 cloves
Lime juice 1 pcs.
Chili 2 pcs.

Cooking Steps

Preparation :

1. Marinate the fish fillets with a sprinkle of pepper and salt for 5 min before coating the fish with flour.

2.  In a wok on medium heat: add vegetable oil for deep-frying. Heat until hot enough (bubble should form if you dip a wooden chopstick or spatula in) then add the fish and deep-fry until golden brown. Drain oil and set aside.

3.  In a mixing bowl, combine the BE somtam dressing with crushed garlic, lime juice, shallots, dried shrimps and shredded green mango.

4. Place the warm crispy fish on a serving dish and pour the mango salad on top. Garnish with coriander leaves and fried chilies. A true delight!
