Ingredients

  • White Fish fillet (firm flesh) 140g.
  • Pepper 1 Tsp.
  • Salt 1 Tsp.
  • Wheat flour 1/2 cup
  • BE Som Tam Dressing 6 Tbsp.
  • Green Mango 1 pcs.
  • Shallots 6 heads.
  • Coriander leaves 3 stems.
  • Cashew nuts 1 Tbsp.
  • Dried shrimps 1/4 Tbsp.
  • Garlic 2 cloves
  • Lime juice 1 pcs.
  • Chili 2 pcs.

Cooking Steps

STEP 1

Marinate the fish fillets with a sprinkle of pepper and salt for 5 min before coating the fish with flour.

STEP 2

In a wok on medium heat: add vegetable oil for deep-frying. Heat until hot enough (bubble should form if you dip a wooden chopstick or spatula in) then add the fish and deep-fry until golden brown. Drain oil and set aside.

STEP 3

In a mixing bowl, combine the BE somtam dressing with crushed garlic, lime juice, shallots, dried shrimps and shredded green mango.

STEP 4

Place the warm crispy fish on a serving dish and pour the mango salad on top. Garnish with coriander leaves and fried chilies. A true delight!
